Chewy Chocolate Cookies

If you don’t have a sweet tooth I am jealous! I struggle everyday not to want something sweet – and this recipe is so satisfying! I always prefer to know what I put in my sweet treats so that I am able to inject appropriately for them & my diabetes – so this recipe made a batch of 22 cookies with the macro-nutrients:

136 kcals / 18g CHO / 6g fat / 2g protein

I guess it depends on the sort of chocolate you are using also, I chose white chocolate – but you can choose any you like!

If you require a protein source (with a low CHO/fat content) I highly recommend Milbona Fat Free from Lidl – available in vanilla, raspberry, strawberry or blueberry! It’s so thick & creamy with around 3g of CHO and 8g of Protein per serving and just stir in extra protein powder if needs be!

LOOK AT THOSE CHOCOLATE CHUNKS!!

Ingredients:

50g caster sugar
65g light brown sugar
80g butter
225g self raising flour
1 egg
200g chocolate

METHOD:

  1. Preheat oven to 180C and line baking tray with baking paper
  2. Cream sugar & butter together & mix in egg
  3. Add flour & chocolate and stir – dough should be sticky-ish.
  4. Place blobs of mixture on prepared baking trays & bake for 8-10 minutes & leave to cool.

    With the ingredients I used I was able to yield 22 cookies which gave my cookies a macro nutrient content of
    136 kcals / 18g CHO / 6g fat / 2g protein
